- 700g chopped fresh tomatoes
- 1 medium sized onion, peeled and chopped
- 500 ml vegetable stock
- 1 tsp tomato puree
- 50ml double cream
- 2 tsp sugar, or to taste
- salt and black pepper for seasoning
In a large pan, over medium heat, combine the tomatoes, onion, tomato puree, and chicken or vegetable stock.
Bring to the boil, then turn down the heat and gently simmer for about 20 minutes.
Remove from heat and transfer to a blender.
Blitz in the blender until smooth.
Add sugar to taste.
Season with salt and black pepper.
Drizzle with the cream and serve whilst hot.
